Description

A refreshing watermelon feta salad combining sweet, salty, and citrusy flavors in a quick and easy summer side dish.


Ingredients

6 cups watermelon (900 g)

1 cup feta cheese (150 g)

2 tbsp fresh mint (8 g)

2 tbsp olive oil (30 ml)

1 tbsp lime juice (15 ml)

Salt and black pepper to taste


Instructions

1. Cube watermelon into bite-sized pieces

2. Crumble feta cheese

3. Chop fresh herbs

4. Combine all ingredients in a bowl

5. Drizzle olive oil and lime juice

6. Season lightly

7. Toss gently

8. Chill and serve

Notes

Use cold watermelon for best results

Add feta last to maintain texture
