Description
A bright, juicy summer fruit salad with peaches, strawberries, blueberries, and raspberries tossed in a citrus honey glaze.
Ingredients
3 ripe peaches, sliced (450 g)
2 cups strawberries, hulled and halved (300 g)
1 1/2 cups blueberries (225 g)
1 1/2 cups raspberries (180 g)
1 tablespoon orange juice (15 ml)
1 tablespoon lime juice (15 ml)
1 to 2 tablespoons honey (21 to 42 g)
1 teaspoon orange zest (2 g)
1 tablespoon chopped fresh mint (4 g)
Instructions
1. Wash and dry all fruit thoroughly
2. Hull and halve strawberries
3. Slice peaches into wedges
4. Whisk orange juice, lime juice, honey, and zest
5. Combine peaches, strawberries, and blueberries
6. Pour glaze over fruit and toss gently
7. Fold in raspberries
8. Add mint
9. Chill 15 to 30 minutes
10. Serve cold
Notes
Use slightly firm peaches for best texture
Add raspberries last
