Creamy, zesty Street Corn Chicken Salad packed with smoky corn, juicy chicken, lime, and cheese.
Ingredients
2 cups cooked chicken (300g)
2 cups corn kernels (300g)
1/2 cup mayonnaise (120g)
1/4 cup Greek yogurt (60g)
2 tbsp lime juice (30ml)
1 tsp chili powder
2 cloves garlic
1/2 cup cotija cheese (75g)
1/4 cup cilantro (15g)
1/4 cup red onion (40g)
Salt and pepper to taste
Instructions
1. Prepare chicken by shredding or dicing
2. Char corn in skillet for 5 to 7 minutes
3. Mix dressing ingredients until smooth
4. Combine chicken and corn in a bowl
5. Add dressing and mix well
6. Fold in cheese, onion, and cilantro
7. Adjust seasoning and chill before serving
Notes
Use fresh lime juice for best flavor
Chill before serving for deeper taste
Substitute feta for cotija if needed
