Description

Fresh juicy tomatoes marinated in garlic, herbs, olive oil, and vinegar for the ultimate easy summer salad.


Ingredients

2 pounds ripe tomatoes

1/2 small red onion

1/4 cup olive oil

2 tablespoons red wine vinegar

2 garlic cloves

1/4 cup fresh basil

2 tablespoons parsley

1 teaspoon kosher salt

1/2 teaspoon black pepper


Instructions

1. Slice tomatoes and onions

2. Whisk together olive oil, vinegar, garlic, salt, and pepper

3. Combine tomatoes, onions, and herbs

4. Pour dressing over salad

5. Toss gently
