Fresh Greek Tortellini Salad packed with veggies, feta, and zesty dressing. Perfect easy dinner.
Ingredients
12 oz (340g) cheese tortellini
1 cup (150g) cherry tomatoes
1 cup (130g) cucumber
1/4 cup (40g) red onion
1/2 cup (75g) Kalamata olives
3/4 cup (100g) feta cheese
1/2 cup (120ml) Greek vinaigrette
2 tbsp fresh parsley
Instructions
1. Cook tortellini in salted water
2. Drain and cool completely
3. Chop vegetables
4. Combine all ingredients in bowl
5. Add dressing and toss
6. Chill for 30 minutes
7. Garnish and serve
Notes
Use fresh tortellini for best texture
Chill before serving
