Ingredients
2 chicken breasts (1 lb / 450 g)
4 sandwich rolls or sourdough slices
1/2 cup basil pesto (120 g)
4 slices mozzarella cheese
1 tomato, sliced
1 cup arugula or spinach
2 tbsp olive oil (30 ml)
1 tsp salt
1/2 tsp black pepper
Instructions
1. Slice chicken into thin cutlets and season.
2. Cook chicken in olive oil for 4 to 5 minutes per side.
3. Toast bread until golden.
4. Spread pesto onto bread.
5. Layer chicken, cheese, tomatoes, and greens.
6. Heat assembled sandwiches until cheese melts.
