Description

Ingredients
3 to 4 medium beets (500g)
2 to 3 oranges
3 tbsp olive oil (45 ml)
1 to 2 tbsp lemon juice or vinegar (15 to 30 ml)
Salt and pepper to taste
Optional: goat cheese, nuts, herbs, honey
Instructions
1. Roast or boil beets until tender
2. Cool, peel, and slice
3. Segment oranges
4. Whisk dressing ingredients
5. Combine beets and oranges
6. Add toppings and serve
