Ingredients
1½ lb boneless skinless chicken breasts (680 g)
¼ cup fresh lime juice (60 ml)
zest of 2 limes
1 packed cup chopped cilantro (25 to 30 g), divided
5 garlic cloves, minced
2 tbsp olive oil (30 ml)
1½ tsp cumin
1 tsp chili powder
1 tsp paprika
1 tsp honey optional (7 g)
1¼ tsp kosher salt
½ tsp black pepper
Instructions
1. Pound chicken evenly
2. Whisk marinade ingredients
3. Marinate 10 to 15 minutes
4. Heat 12-inch skillet
5. Cook chicken 5 to 6 minutes per side
6. Rest 5 minutes
7. Simmer quick sauce
8. Slice and serve
