Description
Creamy, refreshing Strawberry Protein Yogurt Bark made with just 3 ingredients. This no bake frozen snack is high in protein, meal prep friendly, and perfect for a quick sweet bite straight from the freezer.
Ingredients
2 cups plain Greek yogurt (480 g)
1 1/2 cups fresh strawberries, chopped small (225 g)
2 to 3 tablespoons honey or maple syrup (42 to 63 g)
Instructions
1. Line a rimmed baking sheet with parchment paper. Use a 9 x 13 inch pan for best thickness.
2. In a medium bowl, stir Greek yogurt with honey or maple syrup until smooth and glossy.
3. Chop strawberries finely. For a stronger swirl, lightly mash about 1/3 of the berries to create juices.
4. Spread yogurt into an even layer about 1/4 inch thick on the prepared pan.
5. Spoon strawberries over the yogurt. Gently swirl with a butter knife 4 to 6 times. Do not overmix.
6. Freeze uncovered for 2 to 3 hours, or until completely firm.
7. Lift bark from the pan, break into pieces, and serve immediately. Store leftovers in the freezer.
Notes
For the creamiest bark, use thick Greek yogurt. Thin yogurt can freeze icy.
If using frozen strawberries, thaw fully and blot dry to reduce excess water.
For extra protein, whisk in 1 scoop vanilla protein powder. Add 1 to 2 tablespoons milk if needed to thin.
Add toppings like mini chocolate chips, sliced almonds, or granola before freezing so they stick.
Store pieces in an airtight container with parchment between layers for up to 2 weeks.
