Description
Juicy garlic butter chicken simmered with fluffy seasoned rice in one pot for an easy comforting dinner.
Ingredients
4 boneless skinless chicken thighs (1 lb / 450 g)
2 tbsp butter (28 g)
1 tbsp olive oil
4 cloves garlic minced
1 small onion diced
1 cup long grain white rice (200 g)
2 cups chicken broth (480 ml)
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped parsley
1 tbsp lemon juice optional
Instructions
1. Season chicken with salt pepper and paprika.
2. Heat olive oil and butter in a large skillet over medium heat.
3. Sear chicken for 4 to 5 minutes per side until golden then remove.
4. Add onion and cook until soft.
5. Add garlic and cook 30 seconds.
6. Stir in rice and toast for 1 to 2 minutes.
7. Pour in chicken broth and thyme.
8. Place chicken on top of the rice.
9. Cover and simmer for 18 to 20 minutes.
10. Rest 5 minutes then garnish with parsley and lemon.
Notes
Rinse rice before cooking for fluffy texture.
Chicken thighs provide the juiciest results.
Allow the dish to rest before serving.
