Description
A bright, chewy, fridge-set No-Bake Strawberry Coconut Slice made with strawberries, oats, and coconut. No oven needed, clean slices, fresh flavor, and perfect for make-ahead desserts and lunchbox treats.
Ingredients
1 cup strawberries, finely chopped (150 g)
1/4 cup coconut oil, melted (60 ml)
1/4 cup honey or maple syrup (60 ml)
1 tsp vanilla extract (5 ml)
1/8 tsp fine salt (about 0.5 g)
1 cup rolled oats (90 g)
1 1/2 cups unsweetened shredded coconut (120 g)
Optional: 1 tbsp freeze-dried strawberry powder (8 to 10 g) for stronger flavor
Optional: 2 oz dark chocolate, melted for drizzle (56 g)
Instructions
1. Line an 8-inch (20 cm) square pan with parchment paper, leaving overhang for easy lifting.
2. Finely chop the strawberries (or pulse briefly for a smoother texture). If very juicy, blot lightly with paper towel.
3. In a medium bowl, stir together melted coconut oil, honey or maple syrup, vanilla, and salt until glossy.
4. Fold in the strawberries until evenly coated.
5. Add oats and shredded coconut. Mix until the mixture looks thick, evenly moistened, and holds together when pressed.
6. Press the mixture firmly into the prepared pan using a spatula or the bottom of a glass for compact, clean slices.
7. Chill in the refrigerator for 1 to 2 hours until fully set (or freeze for 30 to 40 minutes for a quicker set).
8. Lift out using parchment, slice into 9 bars, and serve chilled. Optional: drizzle with melted chocolate, then chill 10 minutes to set.
Notes
Press firmly for neat edges. This is the number one key to clean slices.
If your strawberries are extra juicy, add 2 to 4 tablespoons more coconut (10 to 20 g) to help the slice set.
For a stronger strawberry punch with less moisture, mix in freeze-dried strawberry powder.
Storage: Refrigerate in an airtight container up to 5 days. Freeze up to 2 months and thaw in the fridge.
Best served cold so the coconut oil stays set.
