Description

Fresh, creamy No-Bake Strawberry Cheesecake Cups with a buttery graham crust, fluffy cheesecake filling, and juicy strawberry topping. Easy to prep, gorgeous in jars, and perfect for make-ahead dessert.


Ingredients

Graham Cracker Crumbs: 3/4 cup (90 g)

Unsalted Butter, melted: 2 tbsp (28 g)

Honey or Maple Syrup: 1 tbsp (20 g)

Cream Cheese, softened: 8 oz (225 g)

Greek Yogurt, plain or vanilla: 1/2 cup (120 g)

Powdered Sugar: 1/3 cup (40 g)

Vanilla Extract: 1 tsp (5 ml)

Lemon Juice: 2 tsp (10 ml), divided

Fresh Strawberries, diced: 1 cup (150 g)

Honey or Maple Syrup (for strawberries): 1 to 2 tbsp (20 to 40 g)

Pinch of Salt (optional): 1 pinch


Instructions

1. Make the crust: Mix graham crumbs, melted butter, and honey or maple syrup until evenly moistened. Divide into 6 small cups or jars and press firmly.

2. Whip the filling: Beat softened cream cheese until smooth, 30 to 60 seconds. Add Greek yogurt, powdered sugar, vanilla, and 1 tsp (5 ml) lemon juice. Beat until fluffy and creamy, 60 to 90 seconds.

3. Layer: Spoon or pipe the cheesecake filling over the crust and smooth the tops.

4. Make strawberry topping: Toss diced strawberries with 1 to 2 tbsp (20 to 40 g) honey or maple syrup and 1 tsp (5 ml) lemon juice.

5. Finish and chill: Spoon strawberries on top. Chill at least 30 minutes, or 1 to 2 hours for the cleanest layers. Serve cold.

Notes

Use full-fat cream cheese for the thickest, creamiest texture.

For neat layers, pipe the filling with a zip-top bag with the corner snipped.

Taste your strawberries first. Add only as much sweetener as needed.

Make-ahead: Assemble up to 24 hours ahead and keep covered in the fridge.

Swap crust: Vanilla wafers or digestive biscuits work great. For gluten-free, use gluten-free grahams.
