Description

These No-Bake Lemon Coconut Bliss Balls are bright, creamy, and zesty little bites made with shredded coconut, almond flour, fresh lemon zest, and a touch of honey or maple syrup. They come together in minutes with no oven needed and chill into perfectly soft, snackable treats.


Ingredients

Unsweetened shredded coconut: 1 1/2 cups (120 g), plus extra for rolling (optional)

Almond flour: 1/2 cup (50 g)

Fresh lemon zest: 1 1/2 tablespoons (from about 2 lemons)

Fresh lemon juice: 2 tablespoons (30 ml)

Honey or maple syrup: 3 tablespoons (60 g)

Coconut oil, melted: 2 tablespoons (28 g)

Vanilla extract: 1/2 teaspoon (2.5 ml)

Fine salt: 1 pinch


Instructions

1. Add the shredded coconut, almond flour, lemon zest, and salt to a large bowl (or a food processor).

2. Pour in the lemon juice, honey or maple syrup, melted coconut oil, and vanilla.

3. Mix with a sturdy spoon until a soft, slightly sticky dough forms (or pulse 10 to 15 times in a food processor).

4. Texture check: if too dry, add 1 teaspoon lemon juice or coconut oil; if too wet, add 1 tablespoon almond flour or coconut.

5. Scoop about 1 tablespoon per ball (about 20 g each) and roll between your palms.

6. Optional: roll in extra coconut for a pretty finish.

7. Chill on a parchment-lined plate or tray for 20 to 30 minutes, until firm.

8. Serve chilled or let sit 5 minutes at room temperature for the creamiest bite.

Notes

Nut-free: swap almond flour for oat flour (finely ground oats).

Vegan: use maple syrup instead of honey.

Make-ahead: store in an airtight container in the fridge up to 7 days.

Freezer: freeze up to 2 months; thaw 10 to 15 minutes before eating.

Best texture tip: zest the lemons first, and do not skip the chill time.
