Description

Soft and chewy healthy no bake cookie dough bites made with oat flour, creamy nut butter, maple syrup and mini chocolate chips for a totally safe edible treat.


Ingredients

Scale

1 cup (100 g) oat flour

1/2 cup (120 g) creamy peanut butter or other nut butter

3 tablespoons (45 g) maple syrup or honey

1 teaspoon (5 g) vanilla extract

1/3 cup (60 g) mini chocolate chips

1/8 teaspoon fine sea salt

Optional 2 tablespoons (15 g) vanilla protein powder

Optional 1 to 2 teaspoons milk or water if dough feels dry


Instructions

1. In a medium mixing bowl add the creamy peanut butter, maple syrup, vanilla extract and salt then stir until smooth and well combined.

2. Add the oat flour and optional protein powder to the bowl and mix until a soft dough forms that holds together when pressed.

3. Fold in the mini chocolate chips until they are evenly distributed throughout the dough.

4. If the dough feels too dry or crumbly, add 1 to 2 teaspoons of milk or water and stir again until it comes together.

5. Use a small cookie scoop or spoon to portion the dough and roll into 1 inch balls between your hands.

6. Place the cookie dough bites on a parchment lined plate or tray and chill in the refrigerator for 15 to 20 minutes to firm up.

7. Serve immediately after chilling or transfer the bites to an airtight container for storage in the fridge or freezer.

Notes

For a nut free version use sunflower seed butter instead of peanut butter.

Make sure you use finely ground oat flour for the best smooth cookie dough texture.

If you prefer a sweeter bite add an extra teaspoon of maple syrup.

Use dairy free chocolate chips to keep these cookie dough bites completely dairy free and vegan.

Store in an airtight container in the refrigerator for up to 7 days or freeze for up to 3 months.
