Description
Fudgy, rich No-Bake Brownie Bites (Fudgy & Healthy) made with oat flour, cocoa powder, and nut butter. Naturally sweetened, no oven needed, and perfect for snacks, lunchboxes, or a healthy chocolate treat.
Ingredients
1 cup rolled oats (90 g)
1/4 cup unsweetened cocoa powder (25 g)
1/2 cup creamy peanut butter or almond butter (128 g)
1/4 cup pure maple syrup (80 ml)
1 tsp vanilla extract (5 ml)
1/4 tsp fine salt
Optional: 1/4 cup mini chocolate chips (45 g)
Optional: 1 tbsp chia seeds (10 g)
Instructions
1. Blend the oats in a blender or food processor until a fine flour forms.
2. Add oat flour, cocoa powder, and salt to a mixing bowl and stir to combine.
3. Add nut butter, maple syrup, and vanilla extract. Mix until a thick, fudgy dough forms.
4. If the dough feels dry or crumbly, mix in 1 to 2 tsp extra maple syrup. If too sticky, mix in 1 tbsp oat flour.
5. Fold in chocolate chips and chia seeds if using.
6. Scoop 1 tablespoon portions and roll into balls. You should get about 12 to 16 bites.
7. Chill on a plate or tray for 30 minutes until firm. Store cold for the fudgiest texture.
Notes
For the strongest chocolate flavor, use Dutch-process cocoa powder.
Nut-free option: use sunflower seed butter or tahini.
Gluten-free option: use certified gluten-free oats.
Storage: refrigerate in an airtight container up to 7 days or freeze up to 3 months.
Serving tip: let bites sit at room temperature 5 minutes for a softer, brownie-batter bite.
