Description

Bright, zesty, and chewy Lemon Coconut Bliss Balls made with shredded coconut, almond flour, real lemon zest and juice, and a touch of honey or maple. No bake, naturally sweetened, and perfect for meal prep snacks, lunchboxes, or a fresh little dessert bite.


Ingredients

1½ cups (120 g) unsweetened shredded coconut, plus extra for rolling

¾ cup (75 g) almond flour

¼ cup (80 g) honey or pure maple syrup

1 tbsp (6 g) fresh lemon zest

2 tbsp (30 ml) fresh lemon juice

2 tbsp (28 g) coconut oil, melted

1 tsp (5 ml) vanilla extract

¼ tsp fine salt


Instructions

1. Add the shredded coconut, almond flour, and salt to a food processor bowl (or a mixing bowl).

2. Add the lemon zest, lemon juice, honey or maple syrup, melted coconut oil, and vanilla.

3. Pulse or mix until the mixture looks like moist sand and holds together when pinched. If it feels too dry, add 1 tsp lemon juice. If too wet, add 1 tbsp almond flour.

4. Chill the dough for 10 minutes if your kitchen is warm or the mixture feels soft.

5. Scoop about 1 tablespoon each and roll into 12 to 14 balls.

6. Roll in extra shredded coconut if desired.

7. Chill on a lined tray for 20 minutes until firm, then serve or store.

Notes

Sweetener: Honey adds floral warmth. Maple syrup keeps it vegan.

Texture fixes: If crumbly, add 1 tsp melted coconut oil or lemon juice. If sticky, add 1 tbsp almond flour.

Storage: Refrigerate in an airtight container for up to 7 days. Freeze up to 3 months. Thaw 5 minutes before eating.

Optional add in: Stir in 2 to 3 tbsp (15 to 25 g) vanilla or unflavored protein powder. Add a splash more lemon juice if needed.
