Description
Creamy, no-bake strawberry mousse made from blended cottage cheese. It tastes like strawberry cheesecake mousse, packs plenty of protein, and comes together in minutes with real fruit and simple pantry staples.
Ingredients
1 cup (225 g) cottage cheese (small curd recommended)
1 cup (150 g) strawberries, fresh or frozen (thawed slightly if frozen)
2 to 3 tbsp (40 to 60 g) honey or maple syrup (to taste)
1 tsp (5 ml) vanilla extract
1 tsp (5 ml) lemon juice (optional, for brightness)
Pinch of salt (optional)
Instructions
1. Add cottage cheese, strawberries, honey or maple syrup, vanilla, lemon juice, and salt to a high-speed blender or food processor.
2. Blend 45 to 90 seconds until completely smooth and fluffy, scraping down the sides as needed.
3. Taste and adjust sweetness or lemon, then blend 10 more seconds.
4. Spoon into 2 serving glasses or jars.
5. Chill 30 to 60 minutes for a thicker mousse, or enjoy right away.
Notes
For the smoothest texture, use a high-speed blender and blend until no curds remain.
Frozen strawberries make the mousse thicker and extra cold. Thaw 5 to 10 minutes for easier blending.
Full-fat cottage cheese gives the creamiest, most dessert-like mousse.
Optional boost: add 1/2 scoop vanilla protein powder or 1 tbsp (12 g) chia seeds and blend again.
Storage: refrigerate covered up to 4 days. Freeze up to 1 month, then thaw in the fridge and stir.
