Creamy, no-bake High Protein Berry Gelatin Yogurt Squares made with Greek yogurt, berry gelatin, and juicy berries. They set into soft, sliceable squares that feel like a light cheesecake snack, perfect for meal prep and summer cravings.
Ingredients
2 cups (480 g) plain Greek yogurt, nonfat or 2%
1 packet (0.25 oz / about 7 g) berry gelatin (strawberry, raspberry, or mixed berry)
1 cup (240 ml) hot water
1/2 cup (120 ml) cold water
1 to 1 1/2 cups (150 to 225 g) mixed berries (fresh or frozen)
1 to 2 tablespoons (15 to 30 ml) honey or maple syrup, optional (or a zero-calorie sweetener to taste)
Nonstick spray or a little oil for the pan, optional
Instructions
1. Line an 8 x 8 inch (20 x 20 cm) pan with parchment paper, leaving overhang for easy lifting.
2. In a heatproof bowl, whisk the gelatin packet into the hot water until completely dissolved and clear, about 1 minute.
3. Stir in the cold water. Let the mixture cool 5 to 7 minutes so it is warm, not hot.
4. Add Greek yogurt to a large bowl. While whisking constantly, slowly pour in the cooled gelatin mixture until smooth and fully combined.
5. Taste and add sweetener if needed. Whisk again until silky with no streaks.
6. Gently fold in the berries so they are evenly distributed without crushing.
7. Pour into the prepared pan and smooth the top. Tap the pan lightly on the counter to release air bubbles.
8. Refrigerate until fully set, at least 4 hours (best overnight for the cleanest slices).
9. Lift out using parchment, slice into 9 to 12 squares, and serve chilled.
Notes
For the smoothest texture, do not add hot gelatin directly to yogurt. Let it cool slightly first to prevent separation.
Frozen berries work great. Use them straight from the freezer to reduce bleeding.
For clean cuts, run a knife under hot water, wipe dry, then slice. Repeat between cuts.
Storage: Keep refrigerated in an airtight container for up to 4 days. Freezing is not recommended because the texture can weep after thawing.
