Description

Healthy Cinnamon Apple Yogurt Bake is a cozy, high-protein breakfast bake made with thick Greek yogurt, tender cinnamon apples, and a lightly sweet custard-style base. Perfect for meal prep, snack time, or a wholesome dessert.


Ingredients

2 cups plain Greek yogurt, thick (480 g)

2 medium apples, peeled and diced (about 300 g)

2 large eggs

1/4 cup maple syrup or honey (60 ml)

1 tsp ground cinnamon (2.6 g)

1 tsp vanilla extract (5 ml)

1 tsp baking powder (4 g)

1/8 tsp fine salt (0.75 g)

Optional toppings

1 tbsp chopped walnuts or pecans (8 g)

Extra cinnamon for sprinkling (pinch)

Extra Greek yogurt for serving (as desired)


Instructions

1. Preheat oven to 350°F (175°C). Lightly grease an 8×8 inch (20×20 cm) baking dish or line with parchment.

2. Peel and dice the apples. Toss with cinnamon until evenly coated.

3. In a large bowl, whisk Greek yogurt, eggs, maple syrup or honey, and vanilla until smooth.

4. Whisk in baking powder and salt just until combined.

5. Fold the cinnamon apples into the batter.

6. Pour into the prepared dish and smooth the top. Add optional nuts or a pinch of cinnamon.

7. Bake 35 to 40 minutes, until the edges are set and lightly golden and the center is just slightly wobbly.

8. Cool 10 to 15 minutes before slicing or scooping. Serve warm or chilled.

Notes

Use thick Greek yogurt for the best set. Thin yogurt can make the bake watery.

Honeycrisp, Fuji, Gala, or Pink Lady apples work well. Dice small for even texture.

Do not overbake. The center should jiggle slightly; it firms up as it cools.

Store covered in the fridge up to 5 days. Freeze sliced portions up to 2 months and thaw overnight.

Serve with extra yogurt, apple slices, and a sprinkle of cinnamon for the coziest finish.
