Description

Rich, creamy Healthy Chocolate Tahini Fudge Bites made with dark chocolate, tahini, and a natural sweetener. This no-bake treat sets up silky and sliceable, perfect for meal prep snacks, after-dinner bites, or a healthier chocolate fix.


Ingredients

Scale

1/2 cup tahini (120 g), well stirred

1/2 cup dark chocolate chips or chopped dark chocolate, 70%+ (85 g)

2 tbsp coconut oil (28 g)

3 tbsp maple syrup (45 ml), plus more to taste

1 tsp vanilla extract (5 ml)

1/4 tsp fine sea salt (1 g)

Optional: 1 tbsp unsweetened cocoa powder (5 g) for deeper chocolate

Optional: 2 tbsp chopped pistachios or pumpkin seeds (15 g) for crunch

Optional: flaky sea salt for topping


Instructions

1. Line an 8 x 8 inch (20 x 20 cm) pan with parchment paper, or set out a silicone bite mold.

2. Add the dark chocolate and coconut oil to a heat-safe bowl. Melt gently over a double boiler, or microwave in 20-second bursts, stirring until smooth.

3. Whisk in the tahini until fully combined and glossy.

4. Stir in maple syrup, vanilla, and fine sea salt. Taste and adjust sweetness if needed.

5. If using cocoa powder or mix-ins, stir them in now.

6. Pour into the prepared pan and smooth the top with a spatula. Sprinkle flaky salt if using.

7. Refrigerate 2 hours (softer bite) or freeze 45 to 60 minutes (firmer bite) until set.

8. Lift out, slice into 12 to 16 bites, and serve chilled. Store extras in the fridge or freezer.

Notes

Tahini tip: If your tahini is very thick, warm it for 10 seconds to loosen before mixing.

Chocolate tip: Melt slowly and stir often to prevent grainy texture or seizing.

Texture control: Refrigerate for creamy, truffle-like bites. Freeze for firmer, snappier fudge.

Storage: Keep in an airtight container. Refrigerate up to 7 days or freeze up to 3 months. Thaw 5 minutes before eating.

Diet swaps: For vegan, use maple syrup and dairy-free dark chocolate. For nut-free, use sunflower seed butter instead of tahini.
