Description
Garlic Butter Chicken Bites are juicy, golden chicken pieces cooked in a skillet and tossed in a rich garlic butter sauce for a fast, flavor-packed dinner.
Ingredients
1½ pounds boneless skinless chicken breast, cut into 1-inch pieces (680 g)
1 teaspoon salt (5 g)
½ teaspoon black pepper (2 g)
1 teaspoon paprika (3 g)
1 teaspoon Italian seasoning (3 g)
1 tablespoon olive oil (15 ml)
4 tablespoons unsalted butter, divided (56 g)
4 garlic cloves, minced (12 g)
1 tablespoon fresh lemon juice (15 ml)
2 tablespoons fresh parsley, chopped (8 g)
Instructions
1. Pat the chicken dry with paper towels, then cut it into 1-inch bite-size pieces.
2. Season the chicken with salt, black pepper, paprika, and Italian seasoning, tossing until evenly coated.
3. Heat a large 12-inch skillet over medium-high heat and add the olive oil and 2 tablespoons of the butter.
4. Once the butter is melted and foamy, add the chicken in a single layer and sear for 3 to 4 minutes without moving it until golden on the bottom.
5. Flip the chicken pieces and cook for another 3 to 4 minutes, or until the chicken is cooked through and reaches 165°F (74°C).
6. Reduce the heat to medium and add the remaining 2 tablespoons butter and the minced garlic.
7. Stir constantly for 30 to 60 seconds, until the garlic is fragrant and the butter is melted into a glossy sauce.
8. Add the lemon juice and toss the chicken bites until fully coated in the garlic butter sauce.
9. Sprinkle with chopped parsley and serve immediately.
Notes
Cut the chicken into even pieces so everything cooks at the same rate.
Do not overcrowd the skillet or the chicken will steam instead of brown. Cook in batches if needed.
Add the garlic near the end so it turns fragrant and sweet instead of bitter.
Chicken thighs can be used instead of chicken breast for an even juicier result.
Serve with rice, mashed potatoes, pasta, roasted vegetables, or crusty bread.
