Description

No-bake Easy Chocolate Peanut Snack Squares made with creamy peanut butter, oats, and a smooth chocolate topping. Fast to prep, fridge to set, and perfect for meal prep snacks, lunchboxes, and sweet cravings.


Ingredients

Scale

1 cup (240 g) creamy peanut butter (stir well if natural)

2 cups (160 g) rolled oats (old fashioned)

1/3 cup (115 g) honey or maple syrup

1 teaspoon (5 ml) vanilla extract

1/4 teaspoon (1.5 g) fine salt

1 1/2 cups (255 g) semi sweet or dark chocolate chips (or chopped chocolate)

2 tablespoons (28 g) coconut oil (or unsalted butter)


Instructions

1. Line an 8 by 8 inch (20 by 20 cm) pan with parchment paper, leaving overhang for easy lifting.

2. In a medium bowl, stir peanut butter, honey (or maple syrup), vanilla, and salt until smooth and glossy.

3. Add oats and mix until every oat is coated and the mixture is thick and cohesive.

4. Transfer to the lined pan and press very firmly into an even layer using the back of a spoon or a flat measuring cup.

5. In a microwave safe bowl, melt chocolate chips with coconut oil in 20 second bursts, stirring between each, until completely smooth (or melt gently over a double boiler).

6. Pour chocolate over the base and spread to the edges in a smooth, even layer.

7. Refrigerate 1 to 2 hours until fully set. Lift out using parchment, slice into squares, and serve chilled.

Notes

Pressing the base firmly is the key to squares that do not crumble.

For cleaner slices, warm your knife under hot water, wipe dry, then cut.

Natural peanut butter works great, just stir thoroughly before measuring.

Storage: Refrigerate in an airtight container up to 7 days.

Freezing: Wrap squares individually and freeze up to 2 months. Thaw in the fridge overnight.

Variations: Swap oats for crisp rice cereal for a lighter crunch, or use sunflower seed butter for a nut free version.
