Description

Easy Chocolate Coconut Clusters (Healthy No-Bake) are glossy, crunchy, and deeply chocolatey bites made with simple pantry ingredients. This quick no-bake treat sets in the fridge in minutes and is naturally gluten-free, with easy dairy-free and low-sugar options.


Ingredients

Dark chocolate chips or chopped dark chocolate: 1 cup (170 g)

Unsweetened shredded coconut (fine shred preferred): 1 1/2 cups (120 g)

Coconut oil (optional, for smoother melt and shine): 1 teaspoon (5 ml)

Pinch of fine salt: 1/8 teaspoon

Maple syrup or honey (optional, only if needed): 1 to 2 tablespoons (15 to 30 ml)


Instructions

1. Line a baking sheet with parchment paper and set aside.

2. Add chocolate and coconut oil (if using) to a microwave-safe bowl. Microwave for 20 seconds, stir, then repeat in 15 to 20 second bursts until smooth. Do not overheat. (Or melt gently over a double boiler.)

3. Stir in salt. Add shredded coconut and mix until every strand is fully coated. If using maple syrup or honey, stir it in now until evenly combined.

4. Scoop 1 tablespoon portions onto the prepared tray, leaving a little space between clusters. Gently press each mound to compact so it sets firmly.

5. Refrigerate for 15 to 20 minutes, or until firm and glossy.

6. Serve chilled for the best snap, or let sit at room temperature for 3 to 5 minutes for a softer bite.

Notes

Chocolate choice matters. For the strongest chocolate flavor with lower sugar, use 70 to 85 percent dark chocolate.

Texture tip: Fine shredded coconut makes tighter clusters. If using larger flakes, press clusters firmly so they hold together.

Optional toasting: Toast coconut in a dry skillet over medium heat for 3 to 5 minutes until lightly golden, then cool completely before mixing.

Storage: Keep clusters refrigerated for the cleanest bite. Freeze for longer storage.

Allergy note: Use dairy-free chocolate for a dairy-free version.
