Description
One-blender healthy brownies that bake up ultra fudgy, rich, and deeply chocolatey with minimal cleanup. Naturally sweetened, made with blended oats and Greek yogurt, and ready in about 35 minutes.
Ingredients
1 cup (90 g) rolled oats (use certified gluten free if needed)
1/2 cup (45 g) unsweetened cocoa powder
1 tsp (4 g) baking powder
1/4 tsp (1.5 g) fine salt
2 large eggs
1/2 cup (120 ml) maple syrup or honey
1/2 cup (120 g) Greek yogurt (plain, preferably full fat)
1 tsp (5 ml) vanilla extract
1/4 cup (45 g) chocolate chips (optional, plus more for topping)
Instructions
1. Heat oven to 350°F (175°C). Line an 8 x 8 inch (20 x 20 cm) pan with parchment and lightly grease if needed.
2. Add rolled oats to a blender and blend until flour-like, about 20 to 40 seconds.
3. Add cocoa powder, baking powder, and salt. Pulse 5 to 10 times to combine.
4. Add eggs, maple syrup (or honey), Greek yogurt, and vanilla. Blend until smooth, scraping down once if needed, 20 to 30 seconds.
5. Stir in chocolate chips if using. Pour batter into the pan and smooth the top. Sprinkle a few extra chips on top if you like.
6. Bake 20 to 25 minutes, until edges are set and the center is just barely firm. A toothpick should come out with moist crumbs, not wet batter.
7. Cool in the pan at least 20 minutes before slicing. For the fudgiest slices, cool completely or chill 30 minutes, then cut.
Notes
Pan size: 8 x 8 inch (20 x 20 cm). For thicker brownies, use a 7 x 7 inch pan and add 3 to 5 minutes bake time.
Do not overbake. Brownies set as they cool. Pull them when the center looks just set.
Egg-free option: Use 2 flax eggs (2 Tbsp ground flaxseed + 5 Tbsp water, rest 5 minutes). Texture will be slightly softer.
Dairy-free option: Use a thick dairy-free yogurt. If batter is very thick, blend in 1 to 2 Tbsp milk.
Storage: Airtight at room temp 2 days or refrigerated up to 5 days. Freeze slices up to 2 months.
