Description

Easy Berry Cream Dessert Glasses are a no-bake, layered dessert made with fluffy vanilla cream and juicy berries. They take about 20 minutes to assemble, chill beautifully, and look stunning in clear cups for parties, holidays, or an easy weeknight treat.


Ingredients

2 cups mixed berries (about 300 g), such as strawberries, blueberries, raspberries (slice strawberries)

1 cup cold heavy cream (240 ml)

1/4 cup powdered sugar (30 g), plus more to taste

1 tsp vanilla extract (5 ml)

4 oz cream cheese, softened (113 g), optional for a thicker, cheesecake-like layer

1/2 cup crushed graham crackers or vanilla wafers (60 g), optional for crunch

1 tsp lemon juice (5 ml), optional to brighten berries

Pinch of fine salt, optional to balance sweetness

Fresh mint or extra berries, for garnish (optional)


Instructions

1. Wash and dry the berries well. Slice strawberries. If berries are tart, toss with lemon juice and 1 to 2 teaspoons powdered sugar, then set aside.

2. Chill a mixing bowl and beaters for 10 minutes if possible. This helps the cream whip faster and hold its shape.

3. Add heavy cream, powdered sugar, vanilla, and a pinch of salt to the chilled bowl. Beat on medium speed until soft peaks form, about 2 to 3 minutes.

4. If using cream cheese, beat it in a separate bowl until completely smooth, about 30 to 45 seconds. Fold it gently into the whipped cream until fluffy and combined.

5. Assemble the glasses: spoon or pipe a layer of cream into the bottom of 6 small glasses, then add a layer of berries, then a sprinkle of crumbs (if using).

6. Repeat the layers until the glasses are full, finishing with a final layer of cream on top.

7. Cover and chill for at least 20 to 30 minutes so the layers set and flavors meld.

8. Garnish with extra berries and mint right before serving. Serve cold.

Notes

Berries matter: rinse and dry thoroughly to prevent watery layers.

Cream texture: stop at soft peaks for the smoothest, fluffiest spoonable cream.

Make ahead: assemble up to 24 hours in advance, cover tightly, and garnish just before serving.

Frozen berries: thaw completely and drain very well, then pat dry.

Sweetness: adjust sugar based on berry ripeness.
