Description
Soft high protein cottage cheese flatbread cooked in a skillet in just 15 minutes.
Ingredients
1 cup cottage cheese (225 g)
1 cup all purpose flour (120 g)
1 large egg
1 tsp baking powder (5 g)
1/2 tsp salt (3 g)
1 tbsp olive oil (15 ml)
Instructions
1. Blend cottage cheese until smooth.
2. Mix cottage cheese, egg, flour, baking powder, and salt into a soft dough.
3. Knead gently for 1 minute.
4. Divide dough into 4 to 6 pieces and roll into thin circles.
5. Heat skillet over medium heat with olive oil.
6. Cook flatbread 2 to 3 minutes per side until golden.
7. Serve warm.
Notes
Blend cottage cheese well for smooth dough.
Do not over knead.
Cook on medium heat for best texture.
