Fluffy cottage cheese egg bites that are creamy, high-protein, and perfect for meal prep breakfasts.
Ingredients
6 large eggs
1 cup (240 g) cottage cheese
1 cup (100 g) shredded cheese
1 cup (120 g) chopped vegetables
1/2 cup (75 g) cooked turkey bacon or chicken sausage
Salt and pepper to taste
Instructions
1. Preheat oven to 325°F (160°C)
2. Blend eggs and cottage cheese until smooth
3. Prepare and chop fillings
4. Mix all ingredients together
5. Pour into greased muffin tin
6. Bake 22–28 minutes until set
7. Cool slightly before serving

Use silicone molds for easy release
Do not overbake
