Description

Rich, fudgy Coconut Chocolate Protein Bites that are no-bake, naturally sweet, and easy to meal prep. Made with shredded coconut, cocoa, and chocolate protein powder for a healthy snack that tastes like dessert.


Ingredients

1 cup (80 g) unsweetened shredded coconut

1/2 cup (60 g) chocolate protein powder

2 tbsp (10 g) unsweetened cocoa powder

1/3 cup (80 g) almond butter or peanut butter

3 tbsp (60 g) maple syrup or honey

1 tsp vanilla extract

1/8 tsp fine salt

1 to 2 tbsp (15 to 30 ml) milk of choice, only if needed for texture


Instructions

1. Line a plate or small tray with parchment paper.

2. In a medium bowl, mix shredded coconut, chocolate protein powder, cocoa powder, and salt until evenly combined.

3. Add nut butter, maple syrup or honey, and vanilla extract. Stir until a thick dough forms.

4. If the mixture feels dry or crumbly, mix in milk 1 tablespoon (15 ml) at a time until it holds together when pressed.

5. Scoop and roll into 12 to 15 bite-size balls (about 1 tablespoon each).

6. Chill for 20 to 30 minutes, then transfer to an airtight container and keep refrigerated.

Notes

Protein powder: Use a chocolate protein powder you like the taste of. Plant-based and whey both work, but absorption varies, so you may need a splash of milk.

Coconut: Fine shredded coconut gives the smoothest bite. If using larger flakes, pulse briefly in a food processor.

Sweetness: Start with 3 tablespoons sweetener, then taste and adjust if needed.

Storage: Refrigerate up to 7 days or freeze up to 2 months. Thaw 10 minutes before eating.

Nut-free option: Swap nut butter for sunflower seed butter.
