Description
A creamy, high-protein Berry Cottage Cheese Whip made by blending cottage cheese with mixed berries, vanilla, and a touch of honey. It tastes like berry cheesecake fluff, ready in 5 minutes with no cooking.
Ingredients
1 cup cottage cheese (225 g)
1 cup mixed berries, fresh or frozen (140 g)
1 to 2 tablespoons honey (15 to 30 ml), optional
1 teaspoon vanilla extract (5 ml)
1 teaspoon lemon juice (5 ml)
Pinch of fine salt, optional
Instructions
1. Add the cottage cheese to a high-speed blender or food processor and blend 30 to 60 seconds until completely smooth.
2. Add the mixed berries, honey (if using), vanilla, lemon juice, and a pinch of salt (if using).
3. Blend 30 to 45 seconds until thick, creamy, and fully whipped. Scrape down the sides as needed.
4. Taste and adjust sweetness with a little more honey, or add an extra squeeze of lemon for brightness.
5. Serve right away, or chill 20 to 30 minutes for a thicker mousse-like texture.
Notes
For the smoothest texture, blend the cottage cheese by itself first, then add berries.
Frozen berries make the whip thicker and colder, like a soft-serve vibe.
If your blender struggles, add 1 to 2 tablespoons milk (15 to 30 ml) to help it move.
Make it higher protein by blending in 1 scoop unflavored or vanilla protein powder.
Storage: refrigerate in an airtight container up to 4 days. Stir before serving if any separation occurs.
