Description

Fluffy, wholesome banana oat pancake bites made with ripe bananas, rolled oats, and eggs. Naturally sweet, kid-friendly, and perfect for meal prep breakfasts or snacks.


Ingredients

2 ripe bananas (220240 g), very ripe

2 large eggs

1 cup (90 g) rolled oats

1/2 cup (120 ml) milk of choice (dairy or nondairy)

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of salt

Optional: blueberries, mini chocolate chips, or diced strawberries


Instructions

1. Preheat the oven to 350°F (175°C) and lightly grease a 24-cup mini muffin pan or line with silicone liners.

2. Add the milk, eggs, bananas, oats, baking powder, vanilla, cinnamon, and salt to a blender in that order.

3. Blend on high for 30–45 seconds, or until the batter is smooth and pourable with no large oat pieces.

4. Divide the batter evenly among the mini muffin cups, filling each about 3/4 full.

5. Top each cup with a few blueberries, mini chocolate chips, or diced strawberries if using.

6. Bake for 12–15 minutes, or until the bites are puffed, lightly golden around the edges, and the centers spring back when gently pressed.

7. Allow the pancake bites to cool in the pan for 5 minutes, then loosen the edges and transfer to a cooling rack.

8. Serve warm as is or with yogurt, nut butter, or a drizzle of your favorite syrup alternative.

Notes

Use very ripe bananas with brown spots for the best natural sweetness and soft texture.

For gluten-free pancake bites, choose certified gluten-free rolled oats.

For dairy-free, use almond, oat, soy, or coconut milk instead of dairy milk.

For an egg-free version, substitute 2 flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water), noting the bites will be a bit softer.

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheat in the microwave for 8–10 seconds per bite or in a 300°F (150°C) oven or air fryer for a few minutes until warmed through.
