Description
These 3 Ingredient Chocolate Almond Clusters are a fast, no bake treat made with melted chocolate, crunchy roasted almonds, and a pinch of flaky sea salt. They set up with a glossy snap, store beautifully, and are perfect for gifting or quick snacking.
Ingredients
1 1/2 cups (255 g) dark or semi sweet chocolate, chopped (or chips)
1 cup (140 g) roasted almonds (unsalted preferred)
1/2 tsp flaky sea salt, plus a pinch for topping (optional)
Instructions
1. Line a baking sheet with parchment paper or a silicone mat.
2. Melt the chocolate in a microwave safe bowl in 30 second bursts, stirring well between each burst, until smooth (about 60 to 90 seconds total). You can also melt it over a double boiler.
3. Let the melted chocolate sit for 2 minutes so it cools slightly, then stir in the roasted almonds and sea salt until evenly coated.
4. Scoop heaping tablespoons of the mixture onto the lined baking sheet to form 12 to 15 clusters.
5. Optional: sprinkle a tiny pinch of flaky salt on top of each cluster while the chocolate is still wet.
6. Refrigerate for 20 to 30 minutes, or until fully firm. Serve cold or at cool room temperature.
Notes
Chocolate: Use good quality bars for the smoothest melt and best shine. Chips work too, but melt slightly thicker.
Almonds: If your almonds are raw, toast them in a dry skillet for 5 to 7 minutes until fragrant, then cool completely before mixing.
Storage: Keep clusters in an airtight container in the fridge up to 2 weeks, or freeze up to 3 months. Thaw 5 minutes before eating.
Serving: Best texture is chilled or cool room temperature so the chocolate stays snappy.
